I believe you should utilize Expr with ->set():

$q = $qb->update('models\User', 'u')
        ->set('u.username', $qb->expr()->literal($username))

        ->setParameter(1, $editId)

Either that or make all of your values parameters:

        ->setParameter(2, $email)
